I haven’t posted about finished projects in a very long time, but it doesn’t mean there weren’t any!

I love to knit hats and it shows in the recent FO’s. Six hats and a shawl is what I have to show you.

Included at the end of the post is my apple cobbler recipe. The secret to this great recipe? Pecans in the crumble!

First up is Campside by Alicia Plummer from the Pom Pom Quarterly Blog.

Easy to knit but makes a great impact, a free pattern that I recommend, I used Leizu DK in the Anemone colorway for it.

One of my favorite hat, great fit, just enough slouch and an interesting stitch pattern. This one got a lot of use since the cold weather settled in.

Apple Pecan Cobbler

Apple Pecan Cobbler

Course Dessert
Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 8

Ingredients

  • 3 lbs of firm Apples I like to use Cortland
  • 2 tsp Lemon juice
  • ½ tsp Cinnamon
  • ½ Cup Sugar
  • ¾ Cup Flour
  • 1 Cup Instant rolled oat
  • ½ Cup Chopped pecans
  • ½ Cup Brown sugar
  • ½ Cup Cold butter cut in cubes
  • ½ tsp Salt

Instructions

  • Preheat oven to 375F
  • Mix flour, brown sugar and salt. Cut in butter.Add oat and pecans, mixing with your hands. Set aside.
  • Mix apples, lemon juice, cinnamon and sugar. Pour into a 8×11 baking dish.
  • Cover with oat and pecan crumble. Bake for 55-65 minutes.
